Collard Greens are prevalent on African American Tables
Collard Greens were just one of a few select vegetables that Black America was allowed to grow and harvest for themselves.
Some may think that Collard greens originated in Africa but they were originated in Eastern Mediterranean. The Southern style of cooking of greens came with the arrival of African slaves to the southern colonies and the need to satisfy their hunger and provide food for their families.
Here is a brief history of collard greens
- Originated in Greece and Italy
- Part of the cabbage family
- Used in many cuisines
- High in nutritional value
- Part of the African diaspora
- Important to Black food tradition
- Came to the Americas during colonization
- Part of soul food and southern cuisine
