3 boneless chicken breasts
1 teaspoon salt
1 teaspoon pepper
2 (28 oz) cans of crushed tomatoes
1/2 onion, diced
1 tablespoon Italian seasoning
2 cups grated mozzarella cheese
1 pound cooked penne pasta
1/2 cup Parmesan cheese
1/2 cup breadcrumbs
1 tablespoon butter

Directions:

Prepare the Chicken:
Season the chicken breasts with salt and pepper. Place them in your crockpot.

Add the Sauce Ingredients:
Pour the crushed tomatoes over the chicken. Add the diced onion and Italian seasoning. Stir slightly to combine.

Cook:
Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and cooked through.

Shred the Chicken:

Prepare the Topping:
In a small bowl, combine the Parmesan cheese and breadcrumbs. Melt the butter and mix it into the breadcrumb mixture until evenly coated.

Assemble:
Add the cooked penne pasta to the crockpot and stir to coat it with the sauce and shredded chicken. Sprinkle the mozzarella cheese over the top, followed by the Parmesan breadcrumb mixture.

Melt and Crisp the Topping:
Cover the crockpot and cook on high for an additional 15-20 minutes until the cheese is melted and the breadcrumb topping is golden.

Serve:
Scoop the creamy, cheesy garlic Parmesan chicken pasta onto plates and serve hot.
